oat waffles with warm cinnamon apple fruit topping

Oat-Waffles-with-Warm-Cinnamon-Apple-Fruit-ToppingPerfect weekend recipe for a delicious breakfast!

Ingredients:

  • 3 1/2 c. Hy-Vee apple juice
  • 3 tbsp plus 1 tsp Hy-Vee sugar
  • 3 tbsp quick tapioca
  • 2 cinnamon sticks
  • 1/2 tsp ground cinnamon
  • 2 c. Hy-Vee dried mixed fruit
  • 1 c. Hy-Vee dried cherries
  • 1/2 c. whole grain oat flour
  • 1/2 c. Hy-Vee all-purpose flour
  • 2 tsp Hy-Vee baking powder
  • 1/4 tsp Hy-Vee salt
  • 1 c. Hy-Vee skim milk
  • 2 tbsp Hy-Vee butter, melted
  • 1 omega egg, separated
  • Pinnaclife Prebiotic Fiber, 1 scoop = 1 serving (optional for added nutritional benefit!)

Instructions:

  1. For fruit topping, mix juice, 3 tablespoons sugar, tapioca, cinnamon sticks and cinnamon in medium saucepan; let stand 5 minutes. Cook on medium heat, stirring constantly, until mixture comes to a full boil. Add dried fruit and simmer, uncovered, on low for 20 to 25 minutes, or until fruit is tender. Remove cinnamon stick; set aside and keep warm.
  2. For waffles, mix flours, baking powder, 1 teaspoon sugar and salt in medium bowl. Stir in milk, butter and egg yolk until blended. (Add Fiber to this step and mix into batter)
  3. Beat egg white in small bowl on high speed until stiff peaks form. Fold flour mixture into egg white. Pour about 1 cup batter onto center of preheated waffle iron. Bake until steaming stops. Repeat with remaining batter. Serve 1/3 cup warm fruit mixture with each oat waffle.
