Cheeseburger Chowder


  • 1 pound lean ground beef
  • 3/4 c. chopped onion
  • 3/4 c. shredded carrots
  • 3/4 c. diced celery
  • 1 tsp dried Hy-Vee basil
  • 1 tsp dried Hy-Vee parsley
  • 4 tbsp Hy-Vee butter, divided
  • 3 c. Hy-Vee fat-free beef broth
  • 4 c. diced, peeled potatoes
  • 1/4 c. Hy-Vee flour
  • 8 ounces Hy-Vee Smooth n Cheesy
  • 1 1/2 c. Hy-Vee skim milk
  • 1/4 c. Hy-Vee sour cream
  • Hy-Vee salt and Hy-Vee pepper, to taste
  • Pinnaclife prebiotic fiber – optional for added nutritional benefit! (1 scoop = 1 serving)


  1. Brown ground beef; drain and set aside. Saute onions, carrots, celery, basil and parsley in 1 tablespoon butter in a large stockpot until tender.
  2. Add cooked beef, broth and potatoes. Bring to boil; reduce heat, cover and simmer 10 to 12 minutes or until potatoes are tender.
  3. Meanwhile, melt remaining 3 tablespoons butter in a small saucepan. Add flour; cook and stir 2 to 3 minutes or until bubbly. Add Smooth n Cheesy and milk and stir to melt. {Add Fiber here} Add to the beef mixture and heat through.
  4. Remove from heat and add sour cream just before serving. Season with salt and pepper.
