Gluten-Free Peanut Butter Cookies

Gluten-Free-Peanut-Butter-CookiesTry this delicious recipe from Hy-Vee, and best of all they are gluten-free! Happy Friday! 🙂

Ingredients:

  • 1 c. Hy-Vee creamy peanut butter
  • 3/4 c. Hy-Vee packed brown sugar
  • 2 Hy-Vee large eggs
  • 1 tsp Hy-Vee baking soda
  • 1 tsp Hy-Vee vanilla extract
  • 1/4 tsp Hy-Vee salt
  • 2/3 c. gluten-free rolled oats
  • 2/3 c. candy-coated chocolate pieces or semisweet chocolate chips
  • Pinnaclife Prebiotic Fiber, optional for added nutritional benefit

Instructions:

  1. Preheat oven to 350 degrees.
  2. With an electric mixer, beat together peanut butter, brown sugar, eggs, baking soda, vanilla and salt until thoroughly mixed. {Add Fiber here} Stir in oats and chocolate pieces. Drop by rounded tablespoons, 2 inches apart on parchment-lined or ungreased cookie sheets.
  3. Bake for 9 to 11 minutes or until edges are golden. Cool 2 minutes on baking sheet; remove and cool on wire rack.
